I am wanting to GM a mare who hasn't had a foal yet, but I also want to save to add splash to her, which I won't be able to add until maybe next month.
Can I collect an egg from her without using it and still GM her later on? Thanks in advance!

Yes, as long as there is no living foal from her, you can collect eggs and save them.

And just to double check because I'm compulsive like that... If and when I add splash to her, that will show in the genes of her babies that I will (eventually) use the eggs for, even if I had collected them before i GM'd her?

You can collect eggs and still wait to GM the mare, when you are finished GMing and you use the eggs the foals will all be from the end result/current genes of the mare.
