I'm a complete rookie and know almost nothing about this game. I was wondering how I show my horses? I have 2 mares and 1 stallion that all have been in training under saddle so I'm not sure how to enter a show now?

On your barn page, the third column from the right is named "Enter." Click on that and it will take you to the "My Show Entries" page where several classes that your horse is ready for will be listed. Pick one and click "Enter the selected class." The top class on the list will probably have the most horses entered. If you have more than one horse in the same discipline at the same level, you can work your way down the list of classes so that you don't have a lot of horses competing against each other.
When you have done that, an E will show up in the far right column and the check box in the Enter column will disappear, indicating that the horse has been entered in a class. Once that class runs, the check box appears again. You may enter a horse twice per real life week. After the second show, the Enter column will no longer have a check box until the new week begins at midnight between Saturday and Sunday, game time.
Welcome to the game. I hope you're soon enjoying it as much as I do. Don't hesitate to ask any specific questions. We're always glad to help out new players. It's a complex game, so broad general questions can be hard to answer. Specific ones, like yours are easier to handle.
