What is Uneven breeding?

I have seen people talk about it and I want to know what it is, I'm a sorta new breeder and I just wanna know if I am bringing up my line of breed wrong.

There is no right or wrong :) it’s whatever you want to breed for. Uneven just means that the parents came from different generations. Some people prefer even lined pedigrees and others don’t care or just breed even paper levels.

As an example, this 2yr old is uneven pedigree. His dam is foundation, his sire has an extensive background.

As awful as it sounds, I have no other example to show even paper levels than a second gen. :))

This is an example of a 7th generation horse, evenly bred in terms of generations.

This colt below would still be evenly bred, the term is usually used for even generations, horses all go back to foundations at the same level. Some people breed same papers though which is a different thing again. On the colt's pedigree page if you click on View Full Pedigree it will be easier to see
Breeding even generations is mainly used to track quality, and improve through each generation, many people have minimum standards for each generation. Breeding same papers is more to try and get more intact foals, this is also easier with even generations too but doesn't always help improve quality
