this looks like a cool game!

Welcome to Hunt and Jump, BlueBirdCow! It is indeed a cool game. I've been playing it since 2011 and a few of us have been playing since it started in 2006, so it's a game that continues to be fascinating and fun, long-term.
That's because Ammit, the game's creator and owner, is continually improving it with increasingly better features. It's also because she keeps an eye on new discoveries in horse color genetics and adds them to the game. It's also because the game is ruled by the goddess Arengee (RNG, random number generator), so very little is predictable. Sometimes the surprises are wonderful, other times not so much, but they keep the game interesting. I've frequently commented that about the only thing predictable in the game is that if you breed a plain chestnut stallion to a plain chestnut mare, you will get a plain chestnut foal. :D
Don't hesitate to ask questions as you're beginning to play. The game is complex. We're a friendly group, however and like to help new players find their way around.
