How you end up giving gifts generally depends on the type of gift.

If you are giving horses, I believe that there will be a page that lets you select a horse that you currently own and sends it right to your gift recipient anonymously. So until the giving-stage begins on the 15th, you can hold on to the horses you want to give in your barns.

If you are giving a horse that you don't personally own the license for, then I think the best way to do it is to ask the current owner of the horse to hang on to it and then they will sent it directly to your giftee. (I'm not 100% sure on this, it might somehow be possible to send them through the anonymous page like normal horses).

If you're giving straws/eggs, same thing, usually people will be willing to hang on to them and then offer them directly to your giftee.
