Yes, Appy Hour is the only one that occurs every week. However, Ammit has created many Rank Specials whose appearance is tied to specific seasons or holidays. These appear whenever the originating season or holiday comes around.

If you go to your stable home page and scroll down to Account and Stable Management, you'll find My Herd Helper Collection. This lists every Herd Helper in the game, with the accompanying description. It will also tell you how many you own (or do not own) for every one.
