I'm not well acquainted with the appy genes. I know all apps will varnish except for the Evergreen Boughs herd helper.

But from a gene testing perspective, there's nothing that shows that, correct? The only way you know if you've passed that on it to breed two EB horses together?

Actually ; Snowflake varnishes the fastest in HOM form. All Appies will varnish including the EV, though Evergreen will varnish the slowest. If you look at the gene mods avail on a NON Foundation App you ll see a ton of available "options"
@CheshireFarms has done a lot of research on the game genes for appies

Lp is the varnish gene. Some genes modify it but all horses with LP will varnish more or less.

So if I want to slow varnish as much as possible, I would add which gene?

Also, I didn't realize beautiful snowflake varnishes the fastest. *cries*

You don't add a gene. You just have to compare your horses and pick the ones that varnish the slowest. It is pretty easy once you get used to looking at them. Check how much varnish they have at age 3. That is your predictor.
