It says she's had a foal, but on the family page nothing shows.

This one likewise, invisible foal. Plus, I can't figure out why I can't auction her

The foals have been sold back to the game. You can't auction horses for sale.

I thought after 24 hours of selling foals to the game, the horse then does not have that foal so you could do gmt etc. on the mare?

And I didn't know you can't auction sale horses, I thought it was the other way around. Thank you for clarifying that.

You asked about foals not GMT work. You have to color-test horses to GMT them.

That is incorrect. People edit horses after selling the foals back all the time. You have not provided any information about why you think these mares can not be edited.

If they have a foal, how can they be unbred?

The foal that is sold back to the game no longer counts against them in terms of GMTing but they will remain bred the entire season. They just won’t have any foals to their name.

I think if the mare was bred this year, you cant modify them. At least That is what I run into. but if you wait until next season, you should be able to modify them

This is incorrect. You can modify them if all the foals are sold back to the game. You just have to wait 24hours after selling them back, for them to be fully deleted from the game.
