The Cookie Exchange
-
Tis the season for cookies! Lets kick off December with a Cookie Recipe Exchange.
How It Works
1) Post your favorite cookie recipe, with a photo as well as any instructions.
2) Find 1 or 20 recipes from other members you'd like to make.
3) Tell your family the oven is for cookies only, and start baking!
4) Bonus cookie points if you post pictures so we can smell them through the computer screen.
5) You can submit as many recipes as you want, but each recipe should have it's own post.
Please only post something you have actually made, and not just a copy form the internet. As an experienced baker, I can tell you that just because someone wrote it in a Blog, doesn't mean they actually tested the recipe.
A photo is required, we need to know what our cookies should look like in the end.
Fan Voting & Awards
I'm setting aside $1,000,000 HBs for this event. I will award the Top 3 Recipes with $250,000 (enough for 2 GMTs). I will also personally pick 1 recipe for a Chef's Choice Award of $250,000.
Members can cast their vote by giving "Thanks" on other members posts.
You can submit as many recipes as you want, but can only be awarded Fan Favorite once. However you may be awarded Chef's Choice as well as Fan Favorite.

No-Bake Key Lime Clusters
Setting up, but not the finished cookie. Just a little teaser for you.
So next weekend I have a cookie exchange, and I got this idea in my head to make something with Key Limes. Everyone does the typical flavors when I do these things, so this is bound to stand out!
Ingredients
2lb Quality White Chocolate (I used this brand this time)
2 14oz Cans of Sweetened Condensed Milk
Key Limes*
1cp Toasted Chopped Pecans
1cp Toasted Shredded Coconut*
4-5cp Rice Crispy Cereal
9x13 Pan
*I bought a 1lb bag of Key Limes and probably zested about 6 of them or so and juiced all but 4 of them. I added juice to taste, but I really like a kick to my Key Lime, specially if the other flavors are going to be too overpowering. So I kept adding more juice. You can also do regular limes (grocery store limes are typically Persian Limes) or you can skip the zest and just buy a bottle of Key Lime or Lime juice.
*I started with a 14 oz bag of shredded coconut, toasted it, and then ran it through the food processer to make it finer. The idea I had was to roll these treats in the coconut like little truffles.
I took the largest metal (or glass) bowl I had, it holds over a gallon. Placed it on top of a sauce pan with some water in it. You want to use this as a double boiler. Just keep the water off the bottom of your bowl, and be careful when stirring so you don't pour hot water on you.
Use the double boiler to melt the chocolate and sweetened condensed milk. Keep stirring while heating. Once combined, add the zest and juice, mix and taste, add more juice as needed.
Fold in your nuts, coconut and cereal. Get it all nice and combined and dump it into a pan to cool. I suppose you could also keep it in the bowl, but I wanted it to cool sooner so I spread it out.
Right now it's resting in the fridge with plastic wrap over the top (just incase it gets a skin on it). In theory I want to take a mini cookie scoop and make little truffle balls, rolling them in the coconut before putting them in to mini cupcake liners.
I also have some mini Christmas white chocolate chips I can roll them in. I also wanted to get some crushed gram crackers but have to go back to the store for those LOL.
Stay tuned for updates~!
Update
OK so while they taste delicious, they are softer than I was hoping for. And the cereal didn't add any crunch too it (but I didn't want to fill it full of nuts). It's also oilier than I expected, but it turns out the chocolate I ordered had a higher butterfat content. I'll have to try their coating chocolate instead next time.
Things I'd do differently, change the chocolate, add less sweetened condensed milk, skip the cereal, and roll them in gram crackers.Post edited by CheshireFarms at 2023-12-03 19:09:53Thanked by 1TennesseeRain -
Sadly, I can't enter this. When I make cookies they come out looking like someone left crayons in the back window of a car on a very hot day. I could share a great recipe for making home-made granola bars/fruit/nut bars if anyone wants.Post edited by OopsDotCom at 2023-12-08 20:55:56Thanked by 1Fiddler

@OopsDotCom yeah my oven eats cookies, that's why I made a no-bake treat. I actually did a take 2 on this with modifications, and the second one came out more like a cereal cluster.

LOL well event is closed, even though I was the only one to enter lol.

I'm not much of a baker, but I love making ice cream! I have some great recipes for Peach, Vanilla, Chocolate, Blueberry, Coffee, or Coffee Kahlua ice cream if anyone is interested.
Unfortunately, the only cookies I occasionally make are just plain chocolate chip.
