There is useful information in the FAQ User Guide - scroll down to the section on breeding.

If you are using your own horses you need at least one stallion and one or more mares. The stallions must be 3 years old or more, the mares must be 4 years old or more. Go to the stallion's page and on the Control Panel tab click 'Inhouse breeding'. At the top of the page a drop down box will appear with a list of your mares. Pick a mare, put a name (or #) in the foal box and click create foal. The foal will then load up.

Alternatively you can use pastures. Again, there is information in the breeding section of the FAQ.

Actually I think this is something else. I had no problem pasture breeding last season, but now though my pasture is open I can't find a breed button.

Ah that's what I thought but the "your pastures will open on the 5/7th" sign disappeared so I figured it was open. *shrug* guess I'll shut up and wait for midnight lol.
