The current lifetime payout is the estimated total of this horse's remaining daily earnings if it never shows again. If you don't show this horse, that number will just decrease every day by the amount shown in the "daily payout" line. Since all in-game horses are only guaranteed to live to 17, the lifetime payout is the daily bonus × number of days until the horse turns 18. If they survive rollover, the lifetime payout will go up to daily bonus × number of days to next rollover. Here's an example:

This filly has a current lifetime payout of 16,224 hbs. She's already been shown twice this week, so she won't earn more points until next week. So, since her daily payout is 32 hbs, when tomorrow's game day starts, I will receive 32 hbs from her, and her current lifetime payout will go down to 16,192 hbs.

Ret Surplus Poems
This old guy has survived many rollovers, but he might not survive the next one. So his lifetime payout is only 3,496 hbs. That's his daily payout × number of days to next rollover(184×19=3,496).
Daily payout is based on a percentage of each horse's total points. I belive it's about 11%.
