Yep, any horse will benefit as a show horse from being altered, as long as they're still young and training each week. The ex per will always be an exceptional show horse, so might be worth giving up as a breeder, but you should probably PT test ex pros first to see if they'd even be worth showing. An ex pro might be a terrible show horse but would still throw some really awesome 2G show horses so would probably be best put to use that way, producing show horses for you rather than being a show horse itself.
