In this game what is the difference between the denotation of (S^sty) and (S+)?

Sooty gives the appearance of soot having been sprinkled on the horse. Two copies of the gene darken a horse's coat more than one, but the way this shows on the actual horse can vary. This is a chestnut with one copy of Sooty.

And this is a bay horse with two copies of Sooty.

Sooty + gives a dappled effect to the coat. This is a bay horse with two copies of S+.

Sooty+ Is a more intense version of regular sooty.
Sooty darkens a coat, 2 copies darker more then 1 but the amount varies depending on other genes and the horse
Sooty+ is more prone to cause dappling (although regular sooty (sty) can also cause dappling), but acts the same as regular sooty where 2 copies darken more then 1 but the amount varies

Sooty + can also give an almost golden glow to chestnuts. Not a huge difference, but noticeable

White Valley's middle example shows you what a wild Bay ( that's the A+ gene) with two copies of Sooty looks like. It looks quite different to a normal bay. This is an example of just a regular bay(much more common):
