I think when the chocolate interacts with the chinchilla, eye color is effected, so it's more of a soft pink than red. This is a sample from a search for chinchilla chocolates.

Your guys eyes do look a bit dark compared to all but the last one - have you tried re-rolling the protrait?

Chinchilla is a mutation that completely disables the production of red pigment and leaves black pigment to show. In areas where both red pigment and black pigment are disabled this also results in red eyes. (Simplified to ee horses and E horses with agouti in game).
