It's not an event, it is just the first horse you create after activating it.

Just one! it was weird, all the creates said "just 1 hb" but i knew I could only pick one. WHAT a dilemma

Personally, I always go grab some semi-fancy color HH to create my 1000 pt show horse. The 1000 pt show horse is always an Exceptional Show Horse (you can see the tattoo on their page), so there's no need to make a point of creating it with an exceptional HH (that also bumps the era down by two notches instead of one, if that's something you like to pay attention to). I usually pick a HH that I won't feel bad about spaying/gelding yet will make the show horse a little more interesting to look at than just the plain chestnut it's likely to come out as without using a HH. (Strategically, you could think about what color breeders clubs you want to be able to enter it in to compete as a show horse.) I used a buckskin roan dun tobiano this time. :)

I usually use a lower level herd helper that I love the look of, but rarely use because I like my foundations to be red papered. I'll also use it as a chance to make a bone size I don't breed (so riding horse here, and draft on forest), just for variety.
