We don't really have breeds like Arabians, etc. on HJ so you'll need to specify things like height, colour, etc. instead to get what you're looking for.

Foals are the only ones that age up at a half-year mark, to get to yearlings. Otherwise everyone just ages up 1 year every 2 months.

Nope, accounts only count for each server. You're allowed accounts on both servers. So each household would be allowed the 3 accounts on EACH server.
